Winemaking: Organic Chardonnay grapes were hand harvested and underwent direct press before fermentation with indigenous yeast in stainless steel tanks. The wine was bottled before this process was complete in order to trap fizz inside the bottle - ancestral winemaking technique (Pet Nat). Aged for 24 months on the lees. No fining, filtration or added sulphur. 

This Wine: We're not going to pretend we have drank one but the internet makes it sound great! Apparently you can expect complex fruit flavours with a wild edge and mineral finish. Etienne's wines are in very high demand so quantity is scarce. 

Notes on the Winemaker: Etienne Thebaud has been making natural wine in the small village of Cramans since 2007. He works with old vines of native grape varieties to produce some of the most in demand wines from this famous part of France.
