Winemaking: Organic Chardonnay grapes were harvested by hand.  Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, or filtration and just a touch of sulphur.

This Wine: Natural white wine form one of the best producers in Chablis. Arguably my favourite De Moor cuvées as it usually shows a slightly wilder edge than the rest of the wines. Now with the added bonus of time in cellar, this is showing brilliantly with such a strong mineral focus alongside bright citrus and floral notes. Take your time and let the wine develop. You won't be disappointed.

Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
