Winemaking: Chardonnay grapes were purchased from organic producers nearby. Fermentation with indigenous yeast. Aged in tank for 6 months and old barrels for a further 6 months Bottled with no fining, filtration or added sulphur.
This Wine: Clean and precise white wine, more in mineral in flavour with subtle lemon notes. No oak aromas. A versatile partner for food dishes.
Notes on the Winemaker: Emmanuel and Patrice Guillot-Broux oversee17 hectares of vines in the Maçon, southern Burgundy. His great grandfather had first taken over these abandoned vineyards in the 1950s after the phylloxera disaster and they have been farmed organically since the domaine was properly established in 1978.
