Winemaking: Biodynamic Chenin Blanc grapes from volcanic soil were harvested by hand in different stages to achieve precise levels of ripeness. Fermentation with indigenous yeast. No fining, filtration or added sulphur.
This Wine: After studying winemaking in the Loire valley, István fell in love with the Chenin Blanc grape. Upon returning to his homeland, he made sure to plant his favourite variety. Rich and round white wine with energetic acidity. Best served with food.
Notes on the Winemaker: István Bencze is a pioneer of natural winemaking in Hungary. His vineyards are situated on the Szent György hill, in Badacsony near Lake Balaton. He works meticulously in the vineyard, harvesting at multiple times in order the achieve the right balance in the final wine.
