Winemaking: Organic Chenin Blanc grapes were harvested by hand 1/3 underwent whole bunch maceration for 2 weeks whilst the rest was directly pressed. Fermentation with indigenous yeast and aged in old barrels for 2 years. Bottled with no fining, filtration or added sulphur.
This Wine: Natural white wine with rich, pure fruit and a pleasant texture thanks to the partial skin contact. More on the full bodied side and best served with a food dish such as fish or cheese.
Notes on the Winemaker: Francois is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to the craft and avoids using sulphur at any stage as he believes it limits the potential of his wines.
