The natural wine movement had changed his mind and he had already ventured to the Jura to study winemaking and viticulture. After developing a fresh vision for these Chenin vines in Vouvray, Emile quickly pushed the vineyard toward biodynamic farming, introducing horse plowing to revive soil health. Despite severe weather causing drastic losses in his debut vintage, the harvested fruit delivered stunning intensity, validating his direction. In subterranean rock cellars, Emile only employs native yeasts and relies on minimal intervention. His portfolio spans two distinct philosophies: crisp, early-bottled cuvées raised in stoneware and concrete, alongside dense, old-vine lots aged up to a decade in barrel.
