Clairette Blanche and Terret Blanc grapes were harvested by hand. Fermentation with indigenous yeast and macerated on the skins for 7 days before being pressed into old oak barrels where it aged. Bottled with no fining, filtration or added sulphur.
This Wine: Skin contact wine made from 2 white grape varieties native to the Languedoc. Textured and hazy in the glass with flavours of candied orange peel. Rich and concentrated.
Notes on the Winemaker: Edouard Adam is yet to reach 30 years old but is making exciting and expressive natural wines in southern France. He is going against conventional styles from this region by producing light expressions from red grapes and skin contact whites. One to watch!
