Winemaking: Organic Colombard grapes were hand harvested and fermented with indigenous yeast in stainless steel. Bottled before fermentation finished to create fizz (ancestral method winemaking technique) and disgorged 10 months later. No filtration, fining or added sulphur.
This Wine: Sparkling white pet nat with green apple and citrus flavours. Riper fruit than 'I Am The Ninja'. Great as a casual drink with friends.
Notes on the Winemaker: Craig and Carla Hawkins began the Testalonga project in 2008 and are now making some of the most unique wines in South Africa. They work with European grape varieties such as Cinsault and Chenin Blanc along with a range of winemaking techniques. The Baby Bandito range offers amazing value for wines without additions.
