Winemaking: Organic Cortese grapes were hand harvested before fermentation with indigenous yeast in steel tanks. Bottled with addition of original must that was frozen. This kick starts second fermentation in the bottle. No fining or filtration and just a small amount of sulphur.

This Wine: Natural sparkling wine made from the local Cortese grape variety. Essentially this drinks like a Pet Nat despite the winemaking technique being slightly different in this part if Italy where frozen must is used to re-start the fermentation in bottle. Light in body with a spritzy citrus vibe and a salty finish. 

Notes on the Winemaker: Valli Unite has been an organic co-operative in Piedmonte since 1981. The winery is powered with solar energy and the team take a holistic approach to farming and winemaking. In our opinion, they produce the best value natural wines out there.
