Winemaking: Organic Malbec and Cabernet Sauvignon grapes were harvested by hand and fermented with indigenous yeast in stainless steel tanks. Bottled with no filtration, fining or added sulphur.
This Wine: Dark rosé or light red? You can choose! Even though the name translates as Spring, this felt like a winter rosé to us with loads of rich, bramble fruit flavours balanced with refreshing acidity.
Notes on the Winemaker: Christophe Foucher makes wine near Le Cher river in the Loire. He is a methodical winemaker who never rushes to release his bottles until they are ready. He also works outside the AOC system as he disagrees with the amount of synthetic chemicals that are allowed in the wines.
