Winemaking: Organically grown grapes were hand harvested underwent fermentation with indigenous yeast in stainless steel tanks. The wine was bottled before fermentation was complete in order to create fizz inside the bottle (Ancestral winemaking technique - Pet Nat). No fining, filtration or added sulphur.
This Wine: Dark pink sparkling wine (pet nat) which is all about fresh and candied fruit, raspberry and strawberry in particular. Great acidity and very thirst quenching. A wine for the beach.
Notes on the Winemaker: Cati Ribot is a third generation on the island of Majorca but she wanted to move away from growing international grape varieites so you could really taste the balearic island in a bottle! We had been enjoying these wines for a few years every time we visited so we are now delighted to see them imported to the UK for the first time in 2022.
