Winemaking: Organic Tai Bianco grapes grown on limestone and clay soil were harvested by hand. The grapes were crushed and spent 10 days on the skins. Fermentation with indigenous yeast and aged in concrete vats for 9 months. No fining or filtration and just a small amount of sulphur added.
This Wine: Natural skin contact wine which sits somewhere between white and orange in colour. Subtle aromatic and tropical fruit is complimented by herbal and smokey mineral notes. Great as an aperitif or with a light dish.
Notes on the Winemaker: Davide Xodo learnt winemaking in Bierzo and Chianti Classico before returning to his homeland in Vicenza to start his own project back in 2018. He works five hectares of vines and produces perfectly balanced wines that are fresh and fruit-forward. In September 2025, we visited his beautiful winery that looks out over the Colli Berici and were treated to an awesome BBQ!
