Winemaking: Organic grapes were hand harvested and fermented in stainless steel with indigenous yeast. Ancestral winemaking techniques with second fermentation in bottle. No filtration, fining or added sulphur.
This Wine: Sparkling red wine made by ancestral method (Pet Nat). The taste of summer in a bottle! With none made in 2019 we are very happy to have one of our cult classic wines back in Highbury! If you haven't had before, expect a juicy, red cherry fruit bomb!
Notes on the Winemaker: Benoît and his father Bernard farm just outside Nantes in the Loire region (his Mum does the books). We visited the vineyards (Organic since 2010) back in 2017 and tried all his great wines but the Pet Nat's particularly stand out and he has only been making these since 2013.
