Winemaking: Organic Gamay grapes grown on volcanic soil were harvested by hand. 2 week carbonic maceration in stainless steel with indigenous yeast. Aged in tank for 9 months. Bottled with no fining, filtration or added sulphur.
This Wine: Light red wine but with a great concentration of dark cherry fruit. Perfectly balanced with a charming mineral finish.
Notes on the Winemaker: Sylvain Bock makes natural wine in the Ardèche region of France where he likes to give the wine time to develop before release. He cultivates local grape varieties and never uses additions of any kind.
