Winemaking: Organic Gamay grapes were harvested by hand and undwent a long and slow press. Fermentation with indigenous yeast but bottled before this was completed in order to create fizz in the bottle (ancestral winemaking technique, pet nat).
This Wine: Sparkling pink Gamay with a wild edge. Candied red berries on the palate with some nice mineral touches. Make sure this is very cold when you open it and have a glass ready as it's very fizzy on opening, you've been warned!
Notes on the Winemaker: Stéphane Cyran farms just 1.5 hectares of vines in the region of Lorraine. Wine from this region isn't that famous yet but with warmer temperatures in the last few years, this is something that the winemaker believes will change soon.
