Winemaking: Organic grapes grown on volcanic-alluvial soils were harvested by hand and spontaneously fermented with indigenous yeast in stainless steel. This wine was aged on the lees in concrete before the original must was added to kick start the second fermentation. The final wine was not disgorged. Unfiltered and no added sulphur.
This Wine: A sparkling white wine made in Col Fondo, pet nat style (ancestral method). On opening, the mineral and smoky character comes through before the wine's fruitier side reveals itself with delicious orange and lemon aromas. Great with food or by itself.
Notes on the Winemaker: After winning pretty much every trophy under the sun as a player for AC Milan and a manger of Parma, Nevio Scala returned to his home to make natural wine with the help of his son Claudio and daughter-in-law Elise.
