Winemaking: Organic Garnacha Blanca and Moscatel grapes were harvested by hand foot pressed before spending 5 days with the skin. After this everything went into a manual basket press and the juice was then fermented with indigenous yeast in stainless steel tanks where it was then aged for 6 months. No fining, filtration or added sulphur.
This Wine: Skin contact wine with a great balance of apricot, floral and herbal flavours. Best paired with chicken, fish or rich vegetable dishes . Be aware that the wine starts to drop off after about an hour of being open so best share with friends.
Notes on the Winemaker: Josep Serres Miranda was encouraged to start making wine by Laureano Serres of the famous Mendall winery after he had moved back to his home region of Terra Alta in 2012. He is fully committed to the natural wine philosophy so uses no temperature control, moves wine by gravity only, presses using a manual basket press and never adds anything to the wines.
