Winemaking: Organic Grolleau and Cabernet Franc grapes grown on schist soils were harvested by hand. Fermentation with indigenous yeast and bottled before this process was complete in order to create fizz in bottle (ancestral winemaking technique - pet nat). No fining, filtration or added sulphur.
This Wine: Pink sparkling wine that feels very wild and alive! Candied red berry flavours provide an electric zing on the palate. A hazy Pet Nat for a sunny day with friends.
Notes on the Winemaker: Despite having the option to takeover larger areas of vineyards when he was younger, Bruno Rochard chose to take a different approach. He wanted to respect the land concentrate on quality rather than quantity so now farms just 6 hectares in Rablay-sur-Layon with organic and biodynamic practices to produce wines that are characterful and alive.
