Winemaking: Organic Macabeo grapes were hand harvested and crushed by foot. Fermented with indigenous yeast in concrete tank and bottled with no filtration, fining or added sulphur.
This Wine: "The Happy Farmer" returns for 2021. Fruity and saline white wine with lots of haze and texture. Aromatic with citrus and white peach notes. Great value wine from a top producer. Best shared with friends.
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada with partner Anna Serra in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
