Winemaking: Organic (uncertified) grapes were hand harvested and crushed by foot before fermenting on the skins with indigenous yeast in old, large oak barrels. Bottled with no fining or filtration and just a touch of sulphur.
This Wine: Natural skin contact wine, light in body and easy drinking. Pale yellow in the glass with Citrus flavours and a touch of oxidative notes like bruised apple. You can keep the pouch in the fridge for a few weeks after opening. Great for a sunny day in the park! Made for our friends at Weino BIB in Dalston and Al Sur de Granada in...Granada.
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
