Fermentation with indigenous yeast after 48 hours maceration. Aged in old wooden barrels. Bottled with no fining, filtration or added sulphur.

This Wine: Thierry Puzelat has dedicated his time to protecting and making single varietal wines from the Menu Pineau grape. Some of the grapes that went into this wine come from a vineyard planted in 1937. This is a medium to full bodied white with a rich complexity of spiced apple, lemon lime and something tropical. Mint, jasmine, honey, and minerals bring further complexity. Needs a good food pairing and can stand up to something quite rich. The name means 'Goat's Hay'.

Notes on the Winemaker: Thierry Puzelat is a local legend in his region of Touraine in the Loire Valley and his domain Clos du Tue-Boeuf has been organic since 1996. After meeting Marcel Lapierre in the early 90s, he was inspired to take the natural wine route and embarked on a journey to protect and promote rare, indigenous grape varieties around the village of Cheverny such as Romorantin and Menu Pineau. His daughters Zoe and Louise started taking over the reigns in recent years and have brought a new energy and drive to the project whilst respecting the foundations their father has put in the place. Each have contrasting skills and approaches that result in beautifully balanced and age-worthy wines. We visited in 2026 and felt honoured to step into a cellar with so much natural winemaking history.
