Winemaking: Organic Menu Pineau grapes were harvested by hand. Spontaneous fermentation with indigenous yeast in stainless steel and bottled before fermentation was complete (ancestral method). No fining or filtration and just a touch of sulphur on bottling.
This Wine: White sparkling wine made by ancestral method (Pet Nat). Clean, mineral-driven wine with a purity of citrus fruit. Light body and delicate bubbles. Drink before a meal or with a light salad dish.
Notes on the Winemaker: Mikaël Bouges oversees 8 hectares of vines around Faverolles-sur-Cher in Touraine, Loire. He works organically in the vineyard just as his father did since the early 90s. His wines are clean and concise and show great purity of fruit along with strong mineral characteristics.
