Winemaking: Organic Moscatel grapes from young bush vines were harvested by hand. Fermented on the skins for 6 days before ageing in amphora vessels with indigenous yeast. A layer of flor developed on the surface of the ageing wine. No fining, filtration or added sulphur.
This Wine: A very unique expression of Muscat grown under flor! The usual aromatic characteristics of the grape variety have transformed into something quite nutty and savoury. Very unique! Would be great served with cheese.
Notes on the Winemaker: Vicky Sanchez & Nahuel Ibarra worked as sommeliers in San Sebastien before heading to Sierra de Gredos where with some help from local winemaker Fabio Bartolomei (Vinos Ambiz), they began to make their own wine under the name Pequeño Y Salvaje (Small & Wild). They now farm 6 hectares of land and use exciting techniques such as skin contact, amphora fermentation and under flor ageing.
