Winemaking: Organic Moscatel grapes were harvested by hand. Fermentation with indigenous yeast. Bottled before this process had finished in order to create fizz in bottle (Ancestral winemaking technique - pet nat). No fining, filtration or added sulphur.
This Wine: Sparkling white Pet Nat with a cloudy and textured character. Fruity, floral and wild with a nice saline and savoury edge. Very small production.
Notes on the Winemaker: Josh is from Germany and Josie the UK. They met in the Marina Alta region of Valencia after Josie's family moved when she was young and John had a family home there. He completed his winemaking studies in Germany and South Africa before the couple acquired old bush vines in this region which are planted amongst citrus and olive trees. They farm Moscatel at lower plots and red varieties in areas of higher elevation and create hugely characterful wines full of Mediterranean and mountain influences.
