Winemaking: Biodynamic grapes were hand harvested before fermentation with indigenous yeast. Made by ancestral method (pet nat). Bottled with no filtration, fining or added sulphur.
This Wine: A white sparkling wine made in pet nat style. High acidity makes this a great pairing for rich and/or spicy food. Floral, perfumed aromas with peach and apricot fruit. A sparkling wine that would work best with food.
Notes on the Winemaker: Clos Lentiscus is the project of Manel Avinyo who started making wine in 2002 and has worked naturally since 2010. He uses honey from his bees to kickstart the second fermentation in his sparkling wines. Nuria is is daughter who is slowly taking over the reins.
