Winemaking: Organic Moscatel grapes from young bush vines were harvested by hand. Fermented on the skins for 6 days with indigenous yeast and bottled before fermentation was complete in order to create fizz in the bottle (ancestral winemaking technique - Pet Nat). No fining, filtration or added sulphur.
This Wine: Pet Nat sparkling wine with amazing floral and tropical fruit characteristics synonymous with Muscat. The skin contact provides some bonus texture but the wine is still fresh and delicate.
Notes on the Winemaker: Vicky Sanchez & Nahuel Ibarra worked as sommeliers in San Sebastien before heading to Sierra de Gredos where with some help from local winemaker Fabio Bartolomei (Vinos Ambiz), they began to make their own wine under the name Pequeño Y Salvaje (Small & Wild). They now farm 6 hectares of land and use exciting techniques such as skin contact, amphora fermentation and under flor ageing.
