Winemaking: Organic Grenache Gris and Muscat grapes were harvested by hand before a 10 day maceration period. Fermentation with indigenous yeast in stainless steel. Bottled with no filtration, fining or added sulphur.
This Wine: Beautifully balanced orange wine with a mineral character from the Grenache Gris and rowdy, tropical fruit notes from the Muscat. Orange blossom, apricot and pineapple along with some subtle spice. Silky texture. We love it!
Notes on the Winemaker: Paul Old has been making wine in Corbières since 2003 under the name "Le Clos Perdu" but despite already being organic and only using minimal sulphur, he wanted to take that next step to fully natural. In 2018 Project 108 was born and now we get to enjoy these zero sulphur creations.
