Winemaking: Biodynamic grapes were harvested by hand and underwent spontaneous fermentation with indigenous yeast in large, old barrels. Aged on the lees for 14 months, also in barrel. Bottled with no fining or filtration and just a small amount of sulphur.
This Wine: A still white wine that is full of energy and life. High acidity with zingy citrus flavours, some floral notes and a saline quality. Interestingly we also noted a raspberry aroma! Complex wine that is best served with food such as fish.
Notes on the Winemaker: Franz Weninger grew up in Burgenland, the region in East Austria that borders Hungary. He runs two wineries, one in each country using biodynamic techniques with a deep commitment to the environment. His wines offer outstanding value for such high quality.
