Winemaking: Organic Pinot Gris grapes were hand harvested and fermented with indigenous yeast in stainless steel. Bottled before fermentation was complete i order to produce fizz inside the bottle (ancestral winemaking technique - Pet Nat). No fining, filtration or added sulphur.
This Wine: Pet Nat (sparkling wine) with electric acidity and a hint of sweetness. Hazy peach coloured in the glass. Great as an aperitif or with a dessert that isn't so sweet. It's a wild one!
Notes on the Winemaker: Christophe Lindenlaub's family have been making wine in this part of Alsace for over 200 years and the vineyards have undergone organic conversion since 2012. He makes wines full brimming with energy and life.
