Winemaking: Pinot Noir and Pinot Blanc grapes grown in Crouch Valley, Essex were sourced by the winemaker. Whole bunches of the red grapes were infused into direct pressed juice from the white grapes (carbonic maceration). Aged for 11 months in a mixture of acacia barrel, a burgundy barrel that wasn't topped up and a glass carboy that was left outside. Blended and bottled with no fining, filtration or added sulphur.
This Wine: Delicate and complex wine that is light red in colour. Very unique and we have certainly never had an English wine like it. Notes of red and citrus fruits.
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
