Winemaking: Grape varieties were individually fermented with indigenous yeast in a mixture of Qveri and stainless steel. All parts were then combined in stainless steel tanks where sugar was added and wine was bottled. This caused the second fermentation in bottle. Undisgorged, unfiltered and minimal additions of sulphur.
This Wine: Sparkling, Colfondo style wine which means sediment and texture are present. High acidity and low alcohol (9%) with zesty lemon and ripe apple flavours. Creamy finish. Only 6,400 bottles produced.
Notes on the Winemaker: Tillingham is situated on a 13th Century Farm near the village of Rye in East Sussex. They follow a 'progressive' mantra which blends technology with ancient traditions of winemaking. Biodynamic preparations are used in the vineyard and wines are bottled with as little sulphur as possible.
