Winemaking: Organic/Biodynamic Pinot Noir grapes from 50 year old vines were harvested by hand. Fermented with indigenous yeast and 25% whole bunches. Aged in barrels that ranged from 2 to 10 years old. Bottled with no filtration or fining and just a touch of sulphur.
This Wine: Red wine with medium body and aromas of plum, cherry and mullberry. There is also a hint of something earthy or meaty in the mix. Fresh with only a hint of oak. Complex and best served with food.
Notes on the Winemaker: Sylvain Pataille is an expert Burgundian winemaker who independently consults for over 20 other producers in the region but also uses biodynamic practices to farm his own 17 hectares in and around the Marsannay appellation. He has the rare ability to create reds and whites of equal prestige (and even rosé too) and uses minimal sulphur and new oak.
