Grape Variety: Pinot Noir
Producer: Laisse Tomber (Bastian Wolber)
Region: Baden, Germany
Wild Scale: 2/5
Winemaking: Organic Pinot Noir grapes were harvested by hand. Fermentation with indigenous yeast. Bottled with no fining, filtration or added sulphur.
This Wine: A red wine made with Bastian's own Pinot Noir grapes. This is savoury and mineral, less about fruit. Great complexity and needs a light food dish to really come alive. Only 277 bottles produced.
Notes on the Winemaker: Bastian Wolber is a negociant winemaker in Germany who purchases grapes from some of the biggest names in the natural wine world. He learnt from the best after studying under Jean-François Ganevat in Jura. His wines are clean and precise but intense and full of character.
