Winemaking: Organic Savagnin grapes were de-stemmed and fermented with indigenous yeast. Some original must was kept aside to be added to the wine and kickstart a second fermentation just before the wine was bottled. This created the fizz inside the bottle. No filtration, fining or added sulphur.
This Wine: Sparkling white wine with refreshing acidity and flavours of pear and white peach. The Savagnin grapes were grown in McLaren Vale.
Notes on the Winemaker: David Geyer and Koen Janssens have been working together since 2015 with a mission to produce unique and exciting expressions of grapes such as Gewurtztraminer and Savagnin all the way down in Southern Australia.
