Winemaking: Biodynamic grapes were hand harvested and underwent spontaneous fermentation in cement tanks with indigenous yeast. Bottled with no filtration, fining or added sulphur.
This Wine: Still natural wine that comes in a litre bottle. The blend of red and white juice brings a complexity of fresh and candy fruit flavours. Reductive notes of wet rock and struck match. Very more-ish and great slightly chilled.
Notes on the Winemaker: The Parera family have been winemakers since 1892 and achieved Organic and Biodynamic certification in 1999 and 2013 respectively. As well as growing indigenous grape varieties, they produce honey, almonds, olive oil and more. In their winemaking they work with as little intervention as possible, often using no sulphur at all.
