Winemaking: Organic Trousseau and Pinot Noir grapes were harvested by hand. 80% were de-stemmed whilst the remaining 20% remained in whole bunches. Fermentation with indigenous yeast in a combination of old barrels and stainless steel tanks. Aged separately for 12 months. Blended and bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine with a medium body. Beautiful depth of dark, brambly fruit alongside herbal and menthol complexity. Age-worthy but drinking very well as of June 2025.
Notes on the Winemaker: Jean-Francois Essler hails from North Eastern France and previously worked as a graphic designer before heading off to Burgundy to learn the ropes of winemaking. He then made the short jump to the Jura where he managed to get his hands on an old plot of Ploussard grapes and never looked back. Now working 3 hectares of vines, he is producing precise but characterful wines that combine everything we love about this famous wine region.
