Winemaking: Organic Vespaiola grapes were harvested by hand. Separate fermentation with indigenous yeast in stainless steel. In Spring must was added to the wine on bottling to cause second fermentation in the bottle. No fining, filtration or added sulphur.
This Wine: Sparkling white wine made in the local traditional method. Bright and zippy with citrus fruits and a mineral backbone. Great as an aperitif.
Notes on the Winemaker: Il Ceo means "The Kid" in the local dialect of Davide Andreatta. His mission is to recover and restore old vineyards in and around his local town of Breganze which is just north of Vincenza in Veneto.
