Winemaking: Organic grapes (uncertified) were hand harvested before fermentation with indigenous yeast. Bottled with no filtration, fining or added sulphur.
This Wine: Still, natural white wine in a litre bottle. As with most wines from Clos Lentiscus, a smoky, reductive note runs through the wine and it's balanced well with aromatic fragrances of citrus and white flowers.
Notes on the Winemaker: Clos Lentiscus is the project of Manel Avinyo who started making wine in 2002 and has worked naturally since 2010. He uses honey from his bees to kickstart the second fermentation in his sparkling wines.
