Winemaking: Organic Xarel Lo and Macabeo grapes were sourced from Toni Carbo (La Salada) and de-stemmed by hand. Macerated for 13 days before fermentation with indigenous yeast in amphora vessels. Aged in old oak barrels No filtration, fining or added sulphur. Only 1,300 bottles produced.
Notes on the Winemaker: Dido and Jurriaan hail from the Netherlands and travelled the world learning winemaking before settling right in the North of Catalunya not far from the French border. They crowdfunded their vineyard purchase and are now on their 2nd vintage making wine that is full of joy. We visited in 2019 and listened to records in their winery whilst tasting samples. Each cuvee has a different reference to one of their favourite musicians.
