Winemaking: The juice of organic Pedro Ximénez grapes was fermented in barrels no filled up. This deliberate action causes a veil of flor (indigenous yeast) to form on top and impart unique flavours into the the final wine. This process took place for 2 years before the wine was bottled.
This Wine: A biologically aged wine made in a fino sherry style. Dry with oxidative flavours of cooked apple, hazelnut and mushroom. Amazing partner to sushi or any dish with vinegar. Great aperitif also.
