Winemaking: Organically grown grapes were hand harvested with 40% being affected by noble rot. Whole bunch maceration and fermentation with indigenous yeast. Aged in barrel for 3 years and then bottled with no filtration or added sulphur.
This Wine: Unique Pinot Noir because of the inclusion if grapes that have been subject to noble rot. Light and cloudy with great complexity and a hint of funk. Make sure you decant before drinking.
Notes on the Winemaker: Sébastien Riffault is known for making wines in Sancerre that very much stand out from your classic Sauvignon Blanc expressions. He picks grapes late in the season to capture some botrytis (noble rot) and then works with barrel fermentation, skin contact, deliberate oxidation and extended barrel ageing in order to come with wildly unique wines that are extremely sought after.
