Winemaking: Grapes were de-stemmed and underwent a 10-day carbon maceration before being crushed by foot and pressed into quevri for fermentation with indigenous yeast. Bottled with no fining, filtration or added sulphur.
This Wine: Still, red wine that made in a Nouveau style (released in the same year as the harvest). Light in body with pronounced aromas of fresh and baked cherries along with a hint of redcurrant. A fun, easy drinking wine that doesn't need food alongside. Low in alcohol (10%).
Notes on the Winemaker: Tillingham is situated on a 13th Century Farm near the village of Rye in East Sussex. They follow a 'progressive' mantra which blends technology with ancient traditions of winemaking. Biodynamic preparations are used in the vineyard and wines are bottled with as little sulphur as possible.
