Winemaking: Organic grapes were purchased from a friend of the winemaker's in the Gard region. A mixture of maceration and direct pressing techniques were used before fermentation in stainless steel with indigenous yeast. Aged in tank for 9 months. Bottled with no fining, filtration or added sulphur.
This Wine: A natural Sauvignon Blanc whose tropical character expresses itself thanks to the short maceration period but this is balanced nicely with a mineral character.
Notes on the Winemaker: Sylvain Bock makes natural wine in the Ardèche region of France where he likes to give the wine time to develop before release. He cultivates local grape varieties and never uses additions of any kind.
