Winemaking: Organic grapes were hand harvested and fermented with indigenous yeast in stainless steel. Aged in tank for 18 months before bottling with no fining, filtration or added sulphur.
This Wine: A natural red with medium body and high acidity. The splash of white juice gives the wine and bright and uplifting feel. Red fruit flavours such as cranberry with a hint of game.
Notes on the Winemaker: Catherine Hannoun makes natural wine in the Jura region (about 15 minutes north of Arbois). She only has 3 hectares of vines so quantities are very small and she focusses on producing wines from local grape varieties that honestly reflect the terroir of the region.
