Winemaking: The grower works organically as much as possible but humidity makes it hard in this region. Grapes are harvested by hand and fermented with indigenous yeast (very rare for Txakoli!). Very small amount of sulphur added on bottling.
This Wine: If you have never experienced Txakoli, you are missing out! Really fun, light wine with a hint of fizz. High in acidity with flavours of gooseberry, lemon and lime. Perfect to serve with salty seafood dishes as they do in San Sebastian.
