Winemaking: Organically (uncertified grapes) were hand harvested and fermented with indigenous yeast. Ancestral method (pet nat) winemaking techniques were used where fermentation continued in bottle. No fining, filtration or added sulphur.
This Wine: A pet nat sparkling wine with just about everything going on. Real complexity from the various grapes. Red apple and cherry flavours dominate but with some tropical and perfumed notes also present. Low in alcohol, 10%.
Notes on the Winemaker: Nuria Renom was a sommelier at the infamous Bar Brutal in Barcelona when she started the journey to becoming one of the most exciting winemakers in Catalunya. She is currently working out of the cellar of La Salada (another Highbury Library fave) where she is making tiny productions of wines that burst with life and energy. The wines are not cheap but they are certainly worth it.
