Winemaking: Organically (uncertified grapes) were hand harvested and fermented with indigenous yeast. No fining, filtration or added sulphur.
This Wine: Natural white wine that is still and dry. This one is for the wild crowd only! Funky and fruity with a lot going on. Saline, zingy and tropical but still dry. In the same realm as Wilder Satz by the Brand Brothers. Unique!
Notes on the Winemaker: Nuria Renom was a sommelier at the infamous Bar Brutal in Barcelona when she started the journey to becoming one of the most exciting winemakers in Catalunya. She is currently working out of the cellar of La Salada (another Highbury Library fave) where she is making tiny productions of wines that burst with life and energy
