Winemaking: Organic grapes (uncertified) were hand harvested and crushed by foot before a 15 day maceration. Fermented in stainless steel with indigenous yeast and bottled with no filtration, fining or added sulphur.
This Wine: A very unique wine made from red and white grapes which results in a beautiful pink haze. Refreshing salinity and acidity balanced by red apple, strawberry and stone fruit flavours. Fruity and juicy but dry. The name means something along the lines of "Give them beards and they will go crazy"....
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
