Vegan friendly wine
Winemaking: Organic Aligoté grapes were purchased from Santenay and the Mâcconais. Fermented with indigenous yeast in a mix of steel and amphora vessels. Bottled with no fining, filtration or added sulphur.
This Wine: Natural white wine with a medium to full body. Saline and fragrant but round with some citrus and tropical fruit notes. Refined and precise. Best served with food such a seafood dish.
Notes on the Winemaker: François Écot works out of his grandfather's old house in the small town of Mailly-Le-Chateau in northern Burgundy (near Chablis). He has lived a varied life which included a stint as a Jazz pianist and running his own wine import company in the United States. Now he focusses on making wine from his own 2 hectares near his house or from grapes purchased from friends in Burgundy, Beaujolais and even Catalunya. We paid him a visit in 2022 to see his vines and hear how his latest cuvées were shaping up. A loveable character who makes unique and special wines.
