Winemaking: Biodynamic grapes from Ham Street were harvested by hand. Macerated in whole bunches for 40 days. Co-fermentation with indigenous yeast. Aged in a combination of old barrels and fibre glass tanks. Bottled with no filtration or fining. Small amount of sulphur. 

This Wine: English natural wine made from a blend of red and white grapes. Despite the light alcohol content, this has beautiful concentration thanks to the extended maceration time. Somewhere between a light red and a rosé. Think peach yoghurt with juicy raspberries. A great bottle that us got us excited for what Dani does next.
